Breakfast in Bed

In my Father's day post I had mentioned that I made Mr. Pack breakfast in bed. This was something I had never done before and thought it would be a fun surprise! I made him yummy homemade waffles and the BEST most DELICIOUS syrup recipe on the planet--it's more like caramel sauce and I mean, who doesn't love caramel sauce, right? Below are the recipes I used:

This is the first time ever using the "Special" plate! Sean and I made this
beauty together at Color Me Mine for our 2nd Anniversary. It was so much fun!
You can't see it but the inside of the plate is red with white polka dots :)


Waffles
2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract


Preheat waffle iron. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.


Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.


Buttermilk Caramel Syrup
from Our Best Bites

3/4 c. buttermilk
1 1/2 c. sugar
1 stick real butter
2 Tbsp. Corn Syrup
1 tsp. baking soda
1 tsp. vanilla

Combine buttermilk, sugar, butter, corn syrup, and baking soda in a LARGE pot (I use a stockpot). Bring ingredients to a boil and reduce heat to low. Cook, stirring very frequently, for 8-9 minutes. When it’s done, it should take on this luscious golden-brown color. Remove from heat and add vanilla.
